Cold Tea Christmas Cake

This is my standard tasty cake, which I make every year. Not very many people have eaten it!

mixed dried fruit

cherries

soft brown sugar

Strong tea

55ml

2fl oz

sherry

Self raising flour

large beaten egg

  

Mix fruit, cherries, tea, sugar and sherry together.

Leave to stand for 12 hours - 2 days (one week if you dare!)

Add flour and egg and mix.

Put into a lined 1kg (2lb) loaf tin. Bake for 2 to 2 1/2 hours at 150 deg C (300 deg F, gas 2) -don't burn it!

Leave to cool in the tin. Keep at least 3 days before eating. The longer the better.
